Incubation period is the delay among the consumption of the infected food and the display of the initial symptoms. The period ranges from hours to days and unusually months or years like for the case of Listeriosis or Creutzfeldt-Jacob disease it depends on the agent and the amount consumed. If the symptoms show in 1-6 hours it indicates that it is caused by a chemical or bacterial toxin rather than a live bacteria. The microbes pass into the stomach to the intestine, connected to the cells lining the intestinal walls, and starts to multiply this happens during the incubation period. Several kinds of microbes live in the intestine or several tissues and the symptoms depend on the kind of microbe.

Symptoms of Creutzfeldt-Jacob disease is acquired typically from eating beef from animals that as bovine spongiform encephalopathy (BSE or most commonly known as mad cow disease) is different from bacterial food poisoning. It appears after a few years and after the symptoms appear the disease becomes deadly. Food poisoning obtained from reef fish or other animals is referred to as Tetrodotoxin poisoning it rapidly displays trouble in breathing and numbness and often deadly.
